The curry cure

As we are all holding on to these late days of summer, fall slowly shows its signs. “Back to school” and back to our routines.
Spice it up with this easy curry chicken recipe from one of our staff at T&C!

You’ll need:

1.5 lb. chicken (I like thighs)
1 cup coconut milk
2 medium onions finely chopped
2 tbsp curry powder
1 chili finely chopped
1  cup chicken stock
salt & pepper
squeeze lemon juice
3  cloves garlic

Here’s what you do:

1. Soften the garlic & onion in a frying pan
2. Add chicken to brown
3. Throw in pot & add all other ingredients except coconut milk
4. Cook on low 2-3 hours
5. About half an hour before eating add coconut milk & stir through
